Primanti Bros. Style Sandwich -A Pittsburgh Super Bowl Recipe

(Up until the Super Bowl, I'll be re-posting some of my favorite Pittsburgh Recipes that can be used for your Super Bowl party, in order to make it Pittsburgh authentic. Note that the picture here is of an actual Primanti Bros. Sandwich, and not the one I made in real life. I also altered the recipe so that uses Italian Bread rather than a demi-baguette, which is what I used before.)

Anytime you talk about food from Pittsburgh with a native Pittsburgher (Mmmm... Pittsburgher), inevitably we natives will bring up the wonderful sandwiches from Primanti Brothers.

We're annoying like that.

The sandwich is a carb lovers dream, with big thick slices of bread, topped with french fries. There's also cole slaw and then slices of deli meat. Don't you judge me!

This is a classic sandwich and should be tried at least once in anyone's life.

My own version uses a demi-baguette instead of thick slices of white bread. I also use cappiocola which is technically not on Primanti Bros. City menu, but can be found on their Suburban menu.

  • * 2 thick slices of Italian Bread
  • * 1/2 lb of your favorite Deli Cuts, sliced (in my case - cappocola)
  • * 4 oz. French Fries, direct from the Fryer
  • * 1/2 cup cole slaw

Make your french fries as per your favorite recipe.

While the potatoes are frying, place slices of deli meat on the bottom half of the bread.

scoop 1/4 of the cole slaw into the bread and spread over the top half of the sandwich.

When the fries are done, place them on a paper towel to allow excess grease to drain. Salt. Place fries on sandwich and top with remaining cole slaw. Slice sandwich in half and serve.

Serves 1

You neglected to mention that the coleslaw is sweet and sour rather than creamy. Do you by chance have a good recipe for sweet and sour coleslaw as I haven't been able to find one that compares to Primanti Bros.

i made these yesterday (my recipe instead of the one above). if you get Ken's brand olive oil vinagrette dressing for the slaw, it's almost just like the real deal!

I now live in Minnesota and miss the P Bros. Ive made them at at home and even had Mancinnis bread sent to me. Good but not the same needs ice cold Iron to wash it down with...

I miss Primanti Bros. with a passion, once back in 1978 after eating some tripe,playing Bocce Ball and shuffle board at the local Italian Hall we ended up at Primantis' for a sandweech' Hoss Fiore heard that a truck driver once ate 11 of them and he said that's b.s. Hoss ate almost 7 all winessed by me, i ate 2 1/2 wow!

this is THE recipe

1 head green cabbage, shredded
1 small vidalia or mayan sweet onion, thinly sliced
*not in the original but I like to add 2 shredded carrots
1/2 cup apple cider vinegar
6 tbs sugar
3 tbs oil (don't use olive oil..it would be too strong)
1 teaspoon salt
1 teaspoon fresh ground pepper

Method

* Combine the shredded cabbage, carrots (if desired) and onions in a bowl
*In a pot, dissolve the sugar into the vinegar and oil over low heat; add the salt and pepper and cool completely
* When cool, pour over the cabbage mixture and chill in the fridge for at least 1 hour before serving. best overnight.
