Beer out of Grape Nuts?

07/21/09, by Kate Hopkins Email 1785 views • Categories: Beer

I've either been reading way too much beer research of late, or there has to be a workable beer recipe found in the cereal aisle of your local grocery store.

In perusing the ingredient list of a box of Grape Nuts cereal, I read the following:

Whole grain wheat flour, wheat flour, malted barley flour, salt, dried yeast, soy lecithin

So, am I crazy, or is there a basic beer ingredient list in here?

What prevents me on committing to my belief that one could make beer out of Grape Nuts and Grape nuts alone is the fact that to get any taste out of the cereal, one would have to bring the Grape Nuts to a healthy temperature, somewhere between 160 and 180 degrees F. Temperatures this high would kill the dried yeast present in the grain, so new yeast would have to be added. This is easily done by using certain types of grapes, or even, apparently, purple cabbage.

Others out there have added grape nuts to standing beer recipes, which isn't using Grape Nuts exclusively. There are second hand reports of others having made a weak beer with a Grape Nuts mash. But I've yet to come across anyone on the Internet who said, "Yes, you can make a beer primarily with Grape Nuts."

So, is it possible?

My friend Marty, a one-time brewmaster at a local brewpub, had the same idea and brewed up a batch of Grape Nuts beer.

The result? Gross. Grape Nuts, as healthy and fiber-filled as they might be, are under-roasted for brewing, and so overprocessed they lose all of the malt characteristics that make beer worth drinking.

My opinion? You'll do just as well making a pot of 'coffee' using week-old grinds that have already been robbed of the essential coffee-ness that once made them useful.

Look up the term "Stuck Sparge". You're not going to be able to filter the grain from the water very easily. There will be tears.

You could add some raw Grape Nuts to your cooled wort to get viable yeast in to your beer without polluting your beer with non-Grape Nut matter.

It seems like it would work, though I don't know anyone who would want to drink it (Unless maybe they're in prison).

If I remember correctly, Charlie Papazian's "Complete Joy of Homebrewing" included a recipe for beer that included Grape Nuts.

Never really felt inspired to make that one. Who knows, maybe it would make a good breakfast beer? ;-}
