12 days of Christmas Cookies: Chocolate Oatmeal No-Bake Cookies

12 days of Christmas Cookies: Day 1

Out of all of the cookies that I have eaten during the Holidays, the no-bake cookies are the ones that first come to mind. I'm sure part of it had to do with the four siblings, each of us competing for our favorite cookies. Part of me believes that my passion for no-bakes is due to the fact that if I had a no-bake, it meant one less for my brother and sisters. Such was the fun of sibling rivalry during Christmas time.

So when choosing cookies for the "12 days of Christmas Cookies" this was the first cookie that what I wanted to make. Because nothing say "Holidays" like the cherished memories of passive-aggressive behavior.

  • 4 Tablespoons butter
  • 1/2 cup whole milk
  • 2 cups granulated sugar
  • 1 cup chocolate chips
  • 3 cups rolled oats
  • 1/2 tablespoon vanilla extract

In a sauce pan placed over medium heat, combine the butter, milk and sugar. Stir well until the butter is melted and bring to a light boil.

Add the chocolate chips and rolled oats. Mix until the chocolate chips melt, combine with the sugar and coat the oats. Add the vanilla and stir.

Using a tablespoon, scoop up some of the batter and drop onto wax or parchment paper. Allow to cool. You can refrigerate to speed up the solidification.

Makes 2 1/2 to 3 dozen cookies

As Kate's sister, I was always under the impression that this recipe only made about a dozen cookies and now Kate reports that, not only does it make as much as 3 times that amount, she was scarfing them down so I would be deprived of Christmas cheer! Now I find out the truth and think Kate will be on Santa's "Naughty List" this year. LOL!!!!

Oh, wow, those bring back memories for me. I remember helping my mom get them flattened on a sheet of tin foil as quick as we could before the batter stiffened up.

Wow, these cookies were really quick to whip up - I don't think it took me more than 15 minutes from warming up the pan to putting the last cookies in the fridge to chill.

But that's not the best part of them. My 3 year old has been known to be VERY picky about cookies - he likes chocolate chip cookies and not much else. He LOVED these cookies.

Thank you very much for a wonderful recipe. I am sure they will be made again and again here.

Thanks, Kate for this recipe. I haven't had these high school! I whipped up an organic version that is fantastic. The memories stored in food are so magical.
