Primanti Bros. Style Cappiocola Sandwich - Pittsburgh Recipes

Anytime you talk about food from Pittsburgh with a native Pittsburgher (Mmmm... Pittsburgher), inevitably we natives will bring up the wonderful sandwiches from Primanti Brothers.

We're annoying like that.

The sandwich is a carb lovers dream, with big thick slices of bread, topped with french fries. There's also cole slaw and then slices of deli meat. Don't you judge me!

This is a classic sandwich and should be tried at least once in anyone's life.

My own version uses a demi-baguette instead of thick slices of white bread. I also use cappiocola which is technically not on Primanti Bros. City menu, but can be found on their Suburban menu.

  • 1 demi-baguette
  • 1/2 lb of your favorite Deli Cuts, sliced (in my case - cappocola)
  • 6 oz. French Fries, direct from the Fryer
  • 3/4 cup cole slaw

Make your french fries as per your favorite recipe.

While the pototoes are frying, cut your baguette lengthwise. Place slices of deli meat on the bottom half of the bread.

scoop 1/4 of the cole slaw into the bread and spread over the top half of the sandwich.

When the fries are done, place them on a paper towel to allow excess grease to drain. Salt. Place fries on sandwich and top with remaining cole slaw. Slice sandwich in half and serve.

My girlfriend is from Pittsburgh and when she described the Primanti Brothers sandwiches to me, I had to have one. On my first trip up there I went to the South Side store and had the cheese-steak. Needless to say, the experience was priceless.

I'd like to mention to anyone wishing to try this one, that the type of cole slaw used on these sandwiches does not have mayonaise in it. It is traditionally an oil/vinegar dressed cole slaw. But feel free to try what you like.

They also put on a slice of tomato. These are very addictive, especially at 2 a.m. when you get a craving for meat and french fries. My favorite is kielbassi.

I have a buddy from Pittsburgh that talked about Primanti's all the time. I always thought he was saying "Pumani's" because of his accent.
Believe it or not, they have a sister restaurant in Ft. Lauderdale; it was pretty bizarre walking off the beach and seeing that place there. Needless to say it was awesome.

Mimi, I'm in Savannah too, and I'm pretty sure Fresh Market carries cappocola...you might have to ask at the deli counter in the middle. Nice to see Pittsburgh-in-Savannah represented!

We are making these for superbowl too...I had one at the stadium once, and want to make it the same. Does anyone know what kind of steak is on the cheesesteak sandwich? Will grilled sirlon work, should it be seasoned with anything special, and is it mozzerella cheese? If anyone has the recipe, I would really appreciate it.

Beg pardon, but one of my faves, the "Cap & Cheese" is item number ten on the City Menu. That's Cappacola in longhand.

Actually, the sweet sausage, egg & cheese is my real fave. Why worry about carbs when your arteries are gonna blow any minute?

At 4AM, it seems reasonable to order two of them... as long as you can get the quart of chocolate milk to wash them down. ;-)
