In the world of Dim Sum, there are a quite a few dishes that are standards. These are the dishes that are as ubiquitous as hamburgers at diners. Ha Gao, or Shrimp Dumplings to those of us who don't speak any of the Chinese languages, fall squarely into this category.

According to that bastion of information, Wikipedia, the core ingredients for a shrimp dumpling include the outer tapioca wrappers, and a filling that consists of (at least)shrimp, cooked pork fat, bamboo shoots, scallions, and cornstarch. Other ingredients may be added depending upon the restaurant you visit.
